Maitake Mushroom in Salmorejo

Here we have a fabulous Pickled Maitake Mushroom served with Salmorejo.

Salmorejo is a cold spanish soup that is like Gazphaco but easier to make. However, do not be fooled it delivers equally when it comes to taste and flavour.

You can add a side of Chicken, Steak or Seafood to this dish but trust me some fresh crusty bread is all that is needed.

An absolutely beautiful meal.
