Crispy Potato Cheese Balls

These are perfect to make if you find yourself with left over potato in the fridge. After adding parmesan cheese and some left over cheddar cheese, rolling them into a ball shape, coating them in Japanese breadcrumbs or Panko, and lightly shallow frying them, you have the making of a very nice appetizer to go with pre-dinner drinks.
You can add any kind of cheese you prefer or even consider adding ham, bacon, or chives too.
