Chicken in Preserved Lemon, Pepper and spices.
This dish started using flattened Chicken that was marinated in Preserved Lemon, pepper and spices. It was then oven roasted and portioned after resting. It was served in a creamy mushroom sauce with fresh tarragon, cream and parmesan. Finally it was plated on a bed of acorn fed Serrano ham from Spain.
