Red Pepper Schnitzel
I came across this recipe by Ottolenghi and instantly fell in love with the idea of a vegetable Schnitzel.
I was a little hesitant to make it at first, I knew the comments would be, where is the meat?
However, I held firm and served it with a really good salad, the Rose Marie sauce which was incredible, and sat back and took the praise. It went down very well indeed and is now a firm go to favourite when I want something delicious but with no meat.
