I found the recipe for these wonderful Samosas in a Book called

Summer under the Tamarind Tree. What a fabulous read and such fabulous recipes.

I had to make these and share, they are so different from standard Samosas but really tasty.

The recipe calls for Samosa pastry but you can use Filo pastry cut into 24 sheets carefully sticking two together by using a brush and oil.

I also watched lots of YouTube videos on how to shape the samosas before I started. You need patience when you start making these but you soon get a handle on how to shape them.
