Thai Red Chicken Curry
This curry does take time to prepare, the dried chilies need to be soaked for two hours for starters. However, making the paste from scratch is really worth your time. Agreed, there are some good pastes on the market now but if you have the time try making this one yourself. This dish was beyond tasty and looks elegant enough to serve to family and friends when they come round for supper too.
