Comfort Food After Weeks of Traveling
When you’ve been away on vacation and you’ve indulged in the delights your travels gave you, here’s a dish that you can cook in a reasonable amount of time, and feel less guilty about eating.
The visual does not lend itself to looking healthy, but I assure you it is. Creamed stuffed chicken breast with sun dried tomatoes. Served in a creamy coconut milk sauce with stock and fresh tomatoes. The filling for the chicken is made with cashew nuts puréed using lemon juice, coconut oil, and sun dried tomatoes, along with some seasonings. The base is baby spinach served plain as the sauce added all the flavour the spinach needed.
