Fresh Sweetcorn Soup with Cheddar and Chicken

When the sweetcorn is in season, especially here in Ontario, then you have to make the most of it because it is just the best.

This soup was so comforting and full of flavour, I had some leftover chicken in the fridge so I added that too and I also added cheese. I was not sure it would work however, for me, it did and everyone enjoyed it too.

Get creative, Sweetcorn appears to be very forgiving and happy to share the limelight.
