Chicken and Chickpeas
I was looking for some ideas on what to do with some chicken I had in the fridge and came across this idea from Allrecipes. I have adapted it a little by adding spinach and onions. I also added a little more heat but that is a personal preference.
The dish is so easy to make and quick too yet, it packs a lot of flavour and good nutritional value.
I certainly recommend this as a great mid week meal.
Just one more note, if you can make it a day ahead it tastes even better
