Honey Masala Spatchcock Chicken
This was a great find, again thanks to Olive Magazine 2021 for sharing this recipe.
It may have been a labour of love to prepare and cook this dish however, I have no regrets about the time spent.
First a huge shoutout to the Honeydew melon that I used for this dish, they are superb. If you can find them please use them otherwise any good quality Mango will do.
The dish is served with a spicy, tangy corn and mango salsa which was lovely all on its own.
The amchoor Mango powder is also a must to have in this dish and can be found in most Asian Grocery stores. Do not leave it out of the recipe, its a game changer.
This platter is a real feast it has everything its sticky, tangy, spicy, sweet and sour.
