Lamb Kofta with spices, Citrus and Jewelled Rice
I came across this recipe in the Olive Magazine and I was so impressed I had to add this to my collection of what not to forget to cook again. This has everything, the introduction to the recipe said Northern Indian cuisine with Persian influences and they did not get it wrong.
There is a fair amount of preparation but it is so worth taking the time in the kitchen to make this dish.
There were left overs too and they re-heated beautifully the next day.
