Nargessi Kofta Loaf

This is such a wonderful moist meatloaf and that is coming from a person that dislikes meatloaf , until now.
The recipe make one large meatloaf however, I actually made individual one person portions and it worked beautifully. That being said next time I will make the large version.
I also omitted the dried apricots due to personal taste. You can do the same or add extra barberries.
The flavours in the meatloaf are so complimentary and when served with a nice salad such as mixed bean and herb they just intensify.
