Beef Casserole with Chimichurri Sauce

I adapted this recipe from one I was given in Argentina. The chimichurri sauce that complimented the dish was delicious and the homemade bread rolls contained Stilton Cheese and Prosciutto, they were delicious.

The wine I chose was a 2005 Spanish Gran Reserva Monasterio De Las Vinas. Half of the bottle went into the casserole the other half was drank with the meal. Always remember to use a wine that you also like to drink otherwise you will not enjoy the casserole as much.

I served with dish with the Chimichurri on top and more in a bowl on the side. It also made a great dip for the bread. I chose the peas as the vegetable side mainly because of the beautiful colour. Feel free to chose your own and if you do not want the bread, rice or creamed potatoes would be equally as nice.
