Summer Spring Rolls with Pineapple Fish Sauce

These are so delicious however, the rolling and use of the rice paper takes a few attempts to get right. Therefore, I suggest when you make these be prepared and have extra paper available. I started to make the first one and ripped the paper, the second one the filling fell out of the side. My third attempt was probably acceptable but I knew I could do better. the fourth attempt and I nailed it! Patience is a virtue……
