I have tried so many recipes for Yorkshire Puddings and most of them come out of the oven looking amazing. However, two minutes later I see them deflate before my eyes, they still deliver on taste but not on looks. Now thanks to an article I read written by Food Lab who conducted all kinds of trials making these puddings, I finally get the perfect result. They tested all kinds of theories and the article was very interesting to read. they were light, crispy, tasty, tall and even after the end of the meal the ones left on the plate, unbelievable I know, but they still stood loud and proud.

Remember, oven has to be red hot, measuring the ingredients accurately is very important too and last but not least do not open the oven until the time is up……
